Steps

  1. 1Cook quinoa in 2.5 cups water with a pinch of salt until fluffy, about 15 minutes.
  2. 2Mix turkey with minced garlic, grated onion, oregano, paprika, egg, salt, pepper, and zest of 1 lemon.
  3. 3Form 16–18 small meatballs. Heat olive oil in a large skillet over medium; brown meatballs 8–10 minutes, turning, until cooked through.

Steps

  1. 1Press tofu 10 minutes; cube and toss with cornstarch and a pinch of salt.

  3. 3Heat olive oil in a wok or skillet over medium-high. Crisp tofu 5–6 minutes; remove.
